Lola is the writer and voice behind www.cheflolaskitchen.com<\/a> on YouTube. She\nstudied Geology and mineral science for her first degree but never worked with\nthe certificate. She chose to follow her passion which is creating delicious\nrecipes and teaching people how to do the same in the comfort of their homes.\nShe shares with Favour Boluwade how she has managed her digitalised food\nbusiness over the years.<\/em><\/p>\n\n\n\n

 What got\nyou interested in food blogging?<\/strong><\/p>\n\n\n\n

The whole blogging idea came from my husband;\nwhen I moved to the United States a couple of years ago, my husband and I\nusually organised get togethers in our house every weekend where I cooked for\neveryone.<\/p>\n\n\n\n

The rave was so much that my husband thought we\nshould open a restaurant, but we knew the restaurant would not thrive because\nwe lived in a very small town, amongst other reasons.<\/p>\n\n\n\n

He then encouraged me to start a youTube channel\nto share the recipes I made. It took some time for me to get convinced, but I\ndid it anyway, and it\u2019s been one of the best decisions I\u2019ve ever made. I  share them on cheflolaskitchen on Instagram\ntoo.<\/p>\n\n\n\n

 This\ngeneration is gradually progressing to more business on social media, how have\nyou made your presence effective on social media platform and YouTube\nespecially?<\/strong><\/p>\n\n\n\n

I try to post recipes with my audience in mind. I\nprioritize visual content as often as possible because these are popular among\nthe demographics I serve and all audiences in general.<\/p>\n\n\n\n

 Has social\nmedia really done enough marketing for you?<\/strong><\/p>\n\n\n\n

Yes, social media has helped to get the word out\nabout what I do.<\/p>\n\n\n\n

But even more important than the exposure, it has\ngiven me the opportunity to develop and grow a relationship with my audience.\nIn that way, I\u2019ve been able to learn from them, know their interests, and get\nfeedback!<\/p>\n\n\n\n

 What\nchallenges have you faced mainly, and how do you accomplish them?<\/strong><\/p>\n\n\n\n

As a blogger, you need to learn a lot. It\u2019s not\njust about writing a food article. It takes me a lot of time to think about\nrecipe ideas, shop for the ingredients, prepare the food, cook or bake them as\nthe case may be, clean up after the whole process, set up the finished food,\nphotograph them, then write the posts.<\/p>\n\n\n\n

To make things a little easier, I\u2019ve learnt to\ndelegate. The truth is, I can\u2019t do it alone so as not to burn out, so I hire\npeople every now and then to assist with different aspects of the work.<\/p>\n\n\n\n

  Any\nadvice for people who have ideas and haven\u2019t worked on them?<\/strong><\/p>\n\n\n\n

Never limit your potential! Set your goals and\nattack them hard! Learn to be comfortable with who you are and what you are. In\npursuing your goals, don\u2019t try to be something you are not. Use your passions\nand creativity to share positive and encouraging messages. Put God in all.<\/p>\n\n\n\n

  How do\nyou manage your family and business?<\/strong><\/p>\n\n\n\n

It\u2019s hard! Yes, I just said that! Juggling kids\nwith business is not a joke, but thanks to a super supportive spouse. We try to\nshare the responsibilities as much as we can.<\/p>\n\n\n\n

I have personally learned some things in the\nprocess to make family life a bit easier: I set work hours, and I try to stick\nto it. I work while everyone is sleeping \u2013 I learned to sacrifice a bit of\nsleep time so that I can be present for them and I take a break when I need to.<\/p>\n\n\n\n

My family does not serve as a distraction to me;\ninstead, they fuel me to do more. They are my number one critique, and my\nnumber one fan!<\/p>\n\n\n\n

I\u2019m Lola Osinkolu- the lucky wife to a man who is\nvery supportive of what I do; he\u2019s my number one fan. I\u2019m a super busy mom to\nthree adorable kids who keep me running even when I don\u2019t want to, and, of\ncourse, I\u2019m a foodie!<\/p>\n\n\n\n

I am a self-taught baker, but I guess that runs\nin the blood because my late grandmother used to be a baker, and my aunt does\nthe same for a living. I guess it runs in the blood!<\/p>\n\n\n\n

When I\u2019m less busy, I love to sing, sew, and go\nto the play park with my family. I\u2019ve got a lot more to say, but I\u2019ll stop\nhere.<\/p>\n\n\n\n

What recipe do you want to share today?<\/strong><\/p>\n\n\n\n

I will be sharing my super easy, but it\u2019s\nbursting with flavour \u2013 made with shrimps, sweet pineapple chunks, rice,\nvegetables, soy sauce, and scrambled eggs. All stir-fried together to create\nthis easy but tasty fried rice. It\u2019s a complete meal in a bowl.<\/p>\n\n\n\n

It comes together in less than 30 minutes if you\nuse leftover white rice!<\/p>\n\n\n\n

 Ingredients<\/strong>:<\/strong><\/p>\n\n\n\n

5 cups cooked rice<\/p>\n\n\n\n

2 Eggs<\/p>\n\n\n\n

2 Tbsp Coconut oil<\/p>\n\n\n\n

1\/2 lb shrimp<\/p>\n\n\n\n

1\/2 cup green peas<\/p>\n\n\n\n

1\/2 cup red onions diced<\/p>\n\n\n\n

1\/2 cup bell peppers diced<\/p>\n\n\n\n

2 scallions diced<\/p>\n\n\n\n

1-1\/2 cup pineapple cubed<\/p>\n\n\n\n

1 Tbsp ginger minced<\/p>\n\n\n\n

1 Tbsp garlic minced<\/p>\n\n\n\n

2 Tbsp sriracha<\/p>\n\n\n\n

1 tbsp soy sauce<\/p>\n\n\n\n

salt and black pepper to taste<\/p>\n\n\n\n

Instructions<\/strong><\/p>\n\n\n\n

Preheat one tablespoon oil, add the eggs and fry\nby scrambling it throughout the pan. Once done after a minute or two, remove\nfrom heat and set aside.<\/p>\n\n\n\n

Heat the remaining two tablespoons oil over high\nheat. Add the diced onion, ginger, and garlic and cook stirring until just\nfragrant, about 30 seconds.<\/p>\n\n\n\n

Add the shrimps and cook on both sides till pink\non the inside<\/p>\n\n\n\n

Add the diced red bell peppers and green peas and\nstir fry for another two minutes<\/p>\n\n\n\n

Stir in the rice, sriracha sauce, soy sauce, salt\n(optional), and black pepper until the rice is heated through.<\/p>\n\n\n\n

Stir in the cubed pineapple, the scrambled eggs,\nand green onions.<\/p>\n\n\n\n

Serve hot.<\/p>\n\n\n\n

Recipe Notes<\/strong><\/p>\n\n\n\n

Be sure to pat dry with a paper towel before\ncooking the shrimps<\/p>\n\n\n\n

Fresh pineapple or canned pineapple can be used\nfor this recipe. However, if you choose to use fresh pineapple, be sure to use\nthe ripe ones with yellow skin. They are sweet and juicy!<\/p>\n\n\n\n

I have used shrimps for this recipe but you can\nuse chicken or beef or keep it vegetarian.<\/p>\n\n\n\n

For best results use a day old rice. If you don\u2019t\nhave that, you can use freshly cooked rice but be sure to let the rice cool\ndown completely before stir-frying it.<\/p>\n\n\n\n

Use a non-stick pan that holds heat well and\nlarge enough to hold all ingredients comfortably.<\/p>\n\n\n\n

I used basmati rice, which comes out with more\nwell-separated grains when cooked, and there\u2019s also a noticeable flavor and\ntexture when you use basmati rice.
